Maori Bread

So I was looking for a bread recipe….I was in a bread-craving mood, okay? ๐Ÿ˜› And, M always loves fresh bread. So, why not? I came across this one after some browsing. Thank you, Bonnie for this amazing recipe!!! It’s a great blog, ps, so jump on over and take a look! This bread was amazing. Just amazing. It’s slightly sweet and very moist! Bonnie said she used brown sugar instead of white and I decided to go that route. I think using brown sugar definitely added more depth of flavor to the bread. I’m also thinking that this recipe is a great base recipe and it will be possible to add some flavor variations to it in the future. Like…toasted pecans…or a touch of cinnamon. Or candied almonds?? Oooh. SO excited. ๐Ÿ˜€ If you try this, let me know how it goes! OR, if you try some different flavor additions, let me know! Also, beware, you need 10 cups of flour! And….it makes 3 loaves of bread! ๐Ÿ˜€

Pretty, pretty bread.


What you need:
5 c. Lukewarm water
1 c. Sugar
2 1/2 T. Yeast

10 c. Flour
1 1/2 t. salt

What to do:
Stir together water, sugar and yeast with a wisk. Let stand for 20 min.

Place flour in large bowl. Make a well in center. Pour yeast mixture in well. Mix until all flour is combined. Will be lumpy. Let stand for 20 min.

Dump dough on heavily floured counter. Knead about 10 times. Dough is very sticky. Form into 3 regular loaves or 4 smaller loaves. Place in greased loaf pans and let raise for 20 min. Bake at 350 for 40-45 min.
