Buttermilk pancakes

2012 was a big year for me; for the blog. It was exciting and full of changes! This blog was created and launched, my etsy business was launched! With all the excitement and changes in 2012, I can only smile as I think about what could happen in 2013. 🙂 Check out the stats from the old blog for last year!

I started 2013 with buttermilk pancakes for breakfast! Don’t worry, I offered some to M – he wanted oatmeal as his main course with some pancakes for nibbling. These pancakes were amazing and easy to make. I found them on allrecipes.com! Love them, we’ll definitely be making them again! They were so fluffy and light!

What you need:
2 tbsps white vinegar
1 cup all purpose flour
2 tbsps white sugar (I used vanilla sugar)
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 egg
2 tbsps butter, melted

What to do:

  1. Combine milk with vinegar in a medium bowl and set aside for 5 minutes to “sour”.
  2. Combine flour, sugar, baking powder, baking soda, and salt in a large mixing bowl. Whisk egg and butter into “soured” milk. Pour the flour mixture into the wet ingredients and whisk until lumps are gone.
  3. Heat a large skillet over medium heat, and coat with cooking spray. Pour 1/4 cupfuls of batter onto the skillet, and cook until bubbles appear on the surface. Flip with a spatula, and cook until browned on the other side.
