Bran flax muffins
With the start of a new year, I was looking for a healthy snack I could have for that time in the morning when you’re hungry but it’s not time for lunch yet. You know what time I’m talking about, I’m sure you’ve all experienced this at one time or another! I just happen to have the appetite of a hobbit and eat 4-5 “meals” a day…plus a snack or two. With an appetite like this, I can’t be snacking on unhealthy things, they’ll add up quickly. I’ve tried bran muffins before and they didn’t quite hit the spot. But these, my goodness; they’re amazing. Sweet enough, but not sugary-sweet; light and fluffy, not dense at all! I started with this recipe from allrecipes.com but my alterations slowly roller-coastered into a recipe that’s more of its own original recipe than one with slight modifications. 😉
Most of my modifications arose because I didn’t have all the ingredients. This is what happens when I decide to make something after we come back from the grocery store. I didn’t have milk on hand, just powdered buttermilk. So, buttermilk it was! The buttermilk is what helped give these puppies some fluff! No carrots either; so, I added shredded coconut. Plus the applesauce and banana to make up for the liquid you would get from shredded carrots. And, of course, craisins instead of raisins! YUM! The result? There were bright bits of cranberry that went well with the nutty coconut flavor, hints of apple and a tiny bit of the banana in a muffin that had a light and fluffy texture! LOVE!
These were a little time-intensive to make, but only because I had the shred the apples and mash the banana. It didn’t take a whole lot of time, but it wasn’t a throw-all-the-ingredients-in-a-bowl-mix-bake recipe. But, my recipe made 30 muffins! So, I put them in the freezer and I’m planning to pull one out each day for my morning snack. 🙂 I figured a snack for 30 days is a good trade off for a Sunday evening in the kitchen. What you need:
1 1/2 cups all purpose flour
3/4 cup ground flax seed
3/4 cup wheat bran
1 cup brown sugar
2 tsp baking soda
1 tsp baking powder
1 tsp salt
2 tsps ground cinnamon
3/4 cup buttermilk
2 eggs, beaten
1 tsp vanilla extract
2 tbsps coconut oil, melted
2 cups shredded coconut, sweetened
2 apples, peeled and shredded
1 banana mashed
3 tbsps apple sauce, unsweetened
1/2 cup craisins (dried cranberries)
What to do:
- Preheat oven to 350 degrees F (175 degrees C). Grease muffin pan or line with paper muffin liners.
- In a large bowl, mix together flour, flax seed, oat bran, brown sugar, baking soda, baking powder, salt and cinnamon.
- In a separate bowl, mix the buttermilk, eggs, vanilla and coconut oil; mix until just blended. Stir in the coconut, apples, banana, applesauce and craisins.
- Add the wet ingredients to the dry and mix with a fork until just blended. Fill prepared muffin cups 2/3 full with batter.
- Bake at 350 F (175 degrees C) for 15 to 20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
